Couscous

How I made Couscous:
Heat oil in pan and then toss uncooked couscous so it is all coated.
Mix couscous and water together (1 cup couscous and about 1.25 cups water or broth).
Bring to a rapid boil. Stir occasionally.  (Some recipes say to boil water first then add couscous... i just combine them right away)
Lower heat to a simmer and cover for about 5 minutes.  You can stir (maybe once) during this five minutes. 
Fluff with fork.
It turned out really tender and moist and this was my first time making couscous.


Mix with Sauce:
Stewed Tomatoes
Garlic
Mushrooms
Cayenne Powder
Turmeric!!
Cumin
Pepper and Salt
Spinach at the end.






Quinoa Patties


Ingredients:
  • 2 1/2 cups cooked quinoa, at room temperature (Eric made 2.5 cups uncooked... hehehe)
  • 4 large eggs, beaten
  • 1/2 teaspoon fine-grain sea salt
  • 1/3 cup finely chopped fresh chives (we didn't have any)
  • 1 yellow or white onion, finely chopped (yellow)
  • 1/3 cup freshly grated Parmesan or Gruyère cheese (no fresh or Gruyere... would have been better with it)
  • 3 cloves garlic, finely chopped
  • 1 cup whole grain bread crumbs, plus more if needed
  • Water, if needed (didn't use)
  • 1 tablespoon extra-virgin olive oil or clarified butter (only used in pan)

  • Quinoa Directions:  1 part quinoa to 1.75 parts liquid.  We only had water but I would use Veggie Broth (or chicken) if in house.  Mix and bring to a rapid boil on stove top.  Reduce heat to Medium-Low and cover with a vented lid.  Stir occasionally (maybe every 3 to 5 minutes the whole time).  When water is absorbed and quinoa texture is to your desire you are done.  You can always add more liquid and/or butter.  About 20 minutes for 1 cup quinoa. 

    Patties:  Mix all ingredients in a large bowl.  Wash hands and make into patties.  We cooked 6 at a time for about 10 minutes on each side.  Lid on.  I read the reviews and it said to be patient and allow patties to brown...

    Salad: Perfect mixing side dish.  Spinach, tomato, red onion, cucumber, goat cheese
    Cooked Quinoa (2.5 cups uncooked!)

    Pizza!

    Grilled Veggies First.
    Layered sauce, spinach, mozzarella cheese, Veggies, More Cheese.
    Baked until slightly brown on top.

    Coconut Rice

    "you put the lime in coconut and shake it all up.  You put the lime in the coconut and drink em both up..."

    Still using my milk:

    2 cups Coconut Milk
    1.5 cups brown rice
    Kosher Salt
    Soy Milk (1/4 cup at a time... I used about 3/4 cups total)

    Not sure what this does but I followed directions (somewhat) and homogenized the coconut milk in my blender on pureeing for about 15 seconds.
    Mixed coconut milk, rice, salt and 1/4 soy milk in pot.
    Bring to a rapid boil.
    Stir and salt occasionally.
    Add more soy milk as needed and remember brown rice takes longer!

    It was GOOD. 
    I didn't know what it would be like but I'd eat it again.
    Add something spicy or green as a side.

    Eric's cOOking!!

    Ahi Tuna
    Marinated in:
    Sesame oil
    Soy Sauce
    Garlic
    Toasted Ginger


    Wasabi Mashed Potatoes
    Soy Milk
    Butter
    Wasabi Paste (same stuff as used with sushi)
    Garlic
    Salt n Pepper

    AND these Baby Style Asian Carrots!!





    Too bad he is going to be gone all next week and I'll have to cook alone.

    Coconut Milk

    ... I finally got around to buying some so I could test it out and attempt to switch but it is GROSS (drinking plane that is).  I bought a coconut water can today and plan to try that tomorrow.  So, we have a container of coconut milk now and I need things to make with it. 

    We tried out Potatoes Baked in Coconut Milk last night.
    It was really delicious!  I added lots of habanero powder, and used curry paste instead of powder because we didn't have it.  I forgot to get a finished product picture :(

    Look Close at sauce on bottom... yummy flavor!



    I also made some beautiful brussel sprouts

    Just chop of ends and slice in half
    Add oil, salt, pepper, and some butter
    Sliced Onions
    Sliced sweet peppers
    Cover on medium heat and simmer (about 20 minutes)
    Stir occasionally
